Breakfast Beans

Well, the weather outside is frightful...which means a hearty warm breakfast is a must! Beans are perfect as a cold weather breakfast food. These amazing legumes offer so many benefits when eaten first thing in the morning, but we rarely think of them for breakfast. Eating beans for breakfast helps to stabilize blood sugars all day because they are rich in protien and fiber, which limits sharp rises in glucose and insulin following a meal. This Hearty Bean Breakfast is one of my family's favorite breakfast entree.

Hearty Crockpot Bean Breakfast

2 cloves garlic, minced
1 medium onion, chopped
10 cups water
2 Cups potatoes, peeled and cubed 
1 3/4 teaspoon salt
1/4 tsp cumin
2 Tbsp Nutritional Yeast Flakes
2 Cups Dried Navy Beans


Place all ingredients into crockpot and cook on high for 6-8 hours. Serve plain or over whole grain toast.
